Gather all ingredients, and equipment to get started.
Start by adding oil to pan, crush lightly the lemongrass add to the pan, while pan has been on low heat for 2 minutes.
start by taking skins of all root veg, half the shallot keeping cord on shallot.
then start dicing up your shallot.
Half the garlic and finely dice, then finely dice the ginger up.
Take lemon grass out of pan and keep the oil on low heat
Add diced ginger sweat down for 1 minute, add your shallot and garlic and cook down in low heat till looks transparent.
Add your white wine vinegar, lemon then soy into pan
Reduce the ingredients down till half it should look like this
Cool mixture down then mix in your honey of choices.
This is how it should look when all done. Goes well with most fish & meats, great with noodles and rices.
